Sometimes, no matter how good you are at “fancy” food, you just want a little something that makes you feel satisfied. That was me last night: I had a steak (NY Strip – my fave) ready to broil and enjoy, but that just wasn’t what I wanted (REALLY unusual for me!).
I considered the delivery possibilities…pizza? No. Asian? Not tonight. BBQ? No, not even smokey, juicy ribs would do this time. I wanted basic…creamy…warm and comforting.
Hmmmmm, what’s in the refrigerator? Well, there’s some leftover take-out rice…some ground beef…and, ah, the last few mushrooms from last night’s salad. Things are looking up.
Chop a small onion and toss it, along with the sliced ‘shrooms and ground beef into the skillet with a bit of oil and sautee until the beef is no longer pink. Add the cooked rice and stir to warm it up. Looks good, but needs something to bring it all together.
Now, for those of you who are all about all-fresh, all-from-scratch, this is not your meal. In fact, this will probably not be your blog…
Here we go…add a can of condensed cream of mushroom soup. There now, that’s looking pretty good. But it’s still a little dry. I could add some water or wine, but wait, here’s a can of cream of celery…that will add a little extra flavor.
Sprinkle with just a bit of salt, a grind or two of black pepper and a dash of hot sauce, and you’ve got a fine, comforting dinner.
If you must, add something green to the plate (parsley doesn’t count!) and enjoy! I sure did!
